Biscoff Blondies

Ingredients

  • 200 grams Butter melted
  • 125 grams Caster Sugar
  • 125 grams Light Brown Sugar
  • 2 Eggs medium
  • 1 tsp Vanilla Extract
  • 260 grams Plain Flour
  • 15 grams Cornflour
  • 200 grams White Chocolate
  • 150 grams Biscoff Spread
  • 150 grams Biscoff Biscuits

Instructions

  • Preheat the oven to 170 degrees celsius. Line a square 8" baking tray with baking paper.
  • In a large bowl or in a free standing mixer, mixed together the melted butter and sugars and beat until smooth.
  • Add the eggs and vanilla and continue to beat until smooth.
  • Add the flour and cornflour and mix until a thick mixture is formed.
  • Add the white chocolate chips to the mixture and fold through.
  • Pour the blondie mixture into the prepared tin, place spoonfuls of the biscoff spread around the blondie and use a knife to swirl into the blondie. Place whole biscoff biscuits on top of the blondie, and then place in the oven and bake for 30-35 mins until the blondie is golden brown and the skewer comes out with a few moist crumbs on it.
  • Leave to cool completely then cut into 12 squares! Enjoy!!
