Biscoff Blondies

If you’re a dessert lover, chances are you’ve come across Biscoff — the caramelised, spiced cookie that has taken the world by storm. From Biscoff-flavored ice creams to milkshakes, this humble cookie has become a viral sensation, adored for its rich, buttery flavour with a hint of cinnamon and ginger. It’s no surprise that bakers everywhere are incorporating it into all kinds of treats, including one of my personal favourites: Biscoff Blondies!!

Blondies, often referred to as “blonde brownies,” are a vanilla-based counterpart to the traditional chocolate brownie. With their chewy texture and butterscotch-like flavour, they provide the perfect canvas for showcasing bold flavours like Biscoff. When swirled into a batch of blondies, Biscoff adds a layer of decadence, pairing perfectly with the sweet, caramel notes of the blondie base. It’s a match made in dessert heaven!

These Biscoff blondies are not only delicious, but they’re also fun to make — perfect for a weekend baking project or to impress guests at your next gathering.

WHAT INGREDIENTS DO YOU NEED?

Here’s what you’ll need to make these melt-in-your-mouth blondies:

1. Butter

Butter forms the foundation of the blondie batter, giving it a rich, moist texture and that irresistible buttery flavour. Be sure to use unsalted butter to control the saltiness of the blondies.

2. Brown Sugar

Brown sugar is crucial in blondies, giving them their characteristic chew and caramel-like flavour. The molasses in brown sugar also adds moisture, keeping the blondies tender.

3. Eggs

Eggs are the binding agent that holds everything together, while also contributing to the soft and fluffy texture. They provide richness and structure to the batter.

4. Flour

Plain flour is the backbone of the blondie batter. It creates the structure and substance, while balancing the sweetness from the sugar and Biscoff.

5. Biscoff Spread

Ah, the star of the show! Biscoff spread is what makes these blondies special. It melts beautifully into the batter, giving each bite a warm, spiced flavour. You can swirl it into the top of the batter before baking for an extra touch of indulgence.

6. Vanilla Extract

Vanilla enhances all the flavours in the blondies, adding depth to the sweet, buttery base. It’s a small addition, but it makes a big difference.

7. Salt

Salt might seem like a small, forgettable ingredient, but it actually elevates the sweetness by balancing it out. It also enhances the flavour of the Biscoff spread.

DIFFERENT WAYS TO MAKE THESE BLONDIES!

While Biscoff is undeniably a crowd-pleaser, the beauty of blondies lies in their versatility. If you’re looking to switch things up, here are a few delicious alternatives that work just as well:

1. Nutella

For the chocolate lovers out there, Nutella is an excellent substitute. Its creamy, hazelnut goodness adds a chocolatey richness to the blondies. You can swirl it into the batter, just like Biscoff, for a marbled effect.

2. Peanut Butter

Craving something more nutty? Peanut butter is a fantastic option. It pairs perfectly with the sweet brown sugar base of the blondies. Use smooth peanut butter for a creamy texture or go for crunchy if you want a little extra bite.

3. Pistachio Butter

For a more unique twist, pistachio butter brings a subtle, earthy flavor to blondies. The nutty richness pairs beautifully with the caramel undertones of the blondie batter, creating an elegant and sophisticated treat.

4. White Chocolate & Raspberry

For a fruity, tangy contrast to the sweet base, try adding white chocolate chips and fresh raspberries. The combination of creamy white chocolate and tart berries adds a bright, fresh flavour to the blondies.

WHY SHOULD I MAKE THESE BLONDIES?

Biscoff blondies are the perfect way to elevate a classic dessert while keeping the familiar, comforting flavours we all love. They’re rich, chewy, and loaded with that delightful caramel-spice flavor Biscoff is known for. Plus, they’re versatile, so if you ever want to swap out the Biscoff for another spread or mix-in, the base recipe is forgiving and easy to adapt.

Not only are these blondies delicious, but they’re also fun to make. Swirling the Biscoff into the batter is an especially satisfying part of the process, and the end result is a tray of golden-brown blondies that look as good as they taste.

Whether you stick with the Biscoff or try a fun variation, these blondies are sure to become a favourite in your baking rotation. So, grab a jar of Biscoff and let’s get baking!

Happy baking, and enjoy every chewy, spiced bite!
