Spiced Apple and Pecan Granola

The Perfect Autumn Breakfast: Spiced Apple and Pecan Granola

As the days grow shorter and a crisp chill lingers in the air, there’s something deeply comforting about starting your morning with a bowl of homemade granola that perfectly captures the flavours of autumn. Enter spiced apple and pecan granola—a warm, fragrant, and delicious breakfast that feels like a hug in a bowl.

Why Make Your Own Granola?

While shop-bought granola can be convenient, nothing beats the control and creativity of making your own. You can adjust the sweetness, experiment with flavours, and ensure you’re using wholesome, high-quality ingredients. Plus, your kitchen will be filled with the irresistible aroma of baked apples, cinnamon, and toasted nuts—a reward in itself.

The Flavour Profile

This granola brings together the earthy sweetness of dried apples and the buttery crunch of pecans, all wrapped in a medley of warming spices. Think cinnamon, nutmeg, and a hint of cloves, balanced by the golden caramel notes of honey or maple syrup. It’s a little bit indulgent but still wholesome—a great way to embrace seasonal ingredients and start your day right.

The Recipe

  1. Preheat Your Oven
Start by preheating your oven to 160°C (140°C fan) and lining a large baking tray with parchment paper.
  2. Mix the base Ingredients
In a large bowl, combine the rolled oats, spices, and salt. Stir to evenly distribute the flavours.
  3. Add the Wet Ingredients
Add all the maple syrup and oil to the mixture and mix well until every oat is lightly coated.
  4. Spread and Bake
Spread the mixture evenly across your prepared baking tray, pressing it down slightly for chunky clusters. Bake for 10 minutes, stirring halfway through to ensure even toasting.
  5. Add the Apples and Pecans
Remove the tray from the oven and sprinkle the dried apple pieces over the granola. Return to the oven for another 10 minutes or until the granola is golden and fragrant.
  6. Cool and Store
Allow the granola to cool completely—it will crisp up as it cools. Once cooled, stir in any additional dried fruit if desired, and store it in an airtight container for up to two weeks.

Serving Suggestions

This granola is incredibly versatile. Enjoy it with a dollop of Greek yoghurt and a drizzle of honey for a luxurious breakfast, or pair it with your favourite milk for a quick and easy start to the day. Feeling a little fancy? Use it as a topping for baked apples or a warm fruit crumble.

A Final Note

Spiced apple and pecan granola is more than just a breakfast—it’s a celebration of autumn’s finest flavours. It’s simple to make, endlessly adaptable, and guaranteed to make your mornings just a little bit brighter. Why not give it a try and see for yourself?
